Slammin’ Coleslaw


Coleslaw

Ingredients

  • 1 small head of organic green cabbage
  • 1 small head of organic purple cabbage
  • 2 whole, organic carrots
  • 1 red onion
  • 1-2 organic apples
  • 2 handfuls organic raisins
  • 2 handfuls raw walnuts
  • 2 1/2 cups vegan mayonnaise (make your own)
  • A small squeeze of raw agave or honey, optional
  • Juice of a lemon and a lime
  • 1/2 teaspoons ground celery seed
  • 1 tablespoon organic ground mustard
  • Pink Himalayan salt crystals and ground black or white pepper to taste

Directions

  • Wash and shred the vegetables and place the mixture in a large bowl
  • In another bowl, mix the vegan mayonnaise, finely ground raw sugar, lemon and lime juice, ground celery seed, and organic ground mustard
  • Make adjustments according to your taste – always start with small amounts when making adjustments
  • Mix the wet mixture and the vegetables
  • Add cranberries, walnuts, and raisins
  • Add pink Himalayan salt crystals and ground black or white pepper, to taste
  • Put the mixture in a covered glass bowl and place it in the refrigerator for 3-4 hours (it’s best when it sits overnight)

Yield: This recipe serves 10-12 people
