Almond Spice Bread

  • 2 1/4 cups blanched almond flour/meal (2 1/4 cups)
  • 1/4 cup ground flax seed
  • 3 tablespoons ground flax seed + 1/2 cup purified water (egg substitute)
  • 1/4 teaspoon pink Himalayan salt crystals
  • 1 1/2 teaspoon baking soda (aluminum free)
  • 2 tablespoons cinnamon (cassia)
  • 1/2 cup raw honey
  • 1 tablespoon lemon juice
  • 1/4 cup unsweetened apple sauce
  • Preheat oven to 300°
  • Mix the egg substitute in a small bowl and set it aside
  • Grease a  6.5 x 4 loaf pan (with extra virgin coconut oil)
  • Combine dry ingredients in a large bowl (almond flour/meal, ground flax seed, pink Himalayan salt crystals, and baking soda)
  • In a separate medium bowl, combine wet ingredients (egg substitute, raw honey, lemon juice and apple sauce)
  • Stir the wet ingredients into dry and mix only until combined
  • Pour batter into the greased 6.5″ x 4″ loaf pan
  • Place loaf pan in the pre-heated oven
  • Bake for about 30-35 minutes or until a knife comes out clean

Yields approximately 12 slices
